If Frank Ma had gone into the import-export business, as he meant to, the world might have gained a tycoon, but Atlanta never would have found one of its most revered chefs and restaurateurs. Born Hong-Min Ma in Beijing in 1940—the year of the dragon, an auspicious sign for boys—he experienced some of the worst years in Chinese history, ending up in a Taiwanese orphanage after his father, an officer in the army of Chiang Kai-shek, died in a shipwreck.
